Yellow Pulao





It's an quick an easy pulao that goes with any mutton, chicken or paneer preparation as well as aloo dum so well.
Ingredients (2-3 servings):


  • Long grain basmati rice, 1 cup
  • Turmeric powder, 1 and 1/2 tsp
  • Yellow food colour, 1/2 tsp
  • Salt to taste
  • Sugar, 1 tbsp
  • Refined oil (I used soybean oil), 4 tbsp
  • Ghee, 2 tsp ( I do not prefer much ghee, so I limited the quantity, but you can increase it if you want)
  • Cinnamon stick ( Dalchini), 1"
  • Green cardamom, 3
  • Bay learf, 1 large
  • Cloves, 3-4
  • Cashews, 1 handfull ( broken into halves)
Methods:



Clean rice and soak in water for 15 minutes, mix turmeric powder and food colour in water to let the rice absorb colour
After 15 minutes if you spoon out some rice you will find it coloured.



Now in a cooker heat oil and ghee and temper with bay leaf, cloves , cinnamon and cardamoms.




Strain rice and store water for later use. Toss rice in oil for 2-3 minutes, add salt and sugar as per your taste. Meanwhile add cashews and toss along with rice.
Now add the coloured water + if  you need more. For one cup of rice add 1 and 1/2 cup water. Stir and lock the lid. Keep the flame low. Cook upto 4 whistles and turn off the flame. Let the pressure release.
As the pressure goes down unlock the lid and transfer the pulao to your serving bowl.

Steamed Egg Noodles

Previously two recipes were posted on steamed egg, one was how to make it and the other one was schezwan steamed egg followed by the steamed egg preparation. And now this one which I made for lunch one day. For me I do not have any preference for lunch like I have to rely upon the daily rice and curry, but something that makes me full at the same time allowing me to enjoy the taste of food too. I enjoyed this preparation and so is sharing with you.


Ingredients (serves 2):
  • Noodles, 100 gm ( I used low fat noodles, you can use pasta instead of noodles)
  • Egg, 2
  • Onion, 1 small
  • Garlic cloves, roasted- Put garlic cloves on direct flame before feeling and keep for 30 secs, peel the outer skin )
  • Chives, chopped, 4 tbsp
  • Salt to taste
  • Black pepper powder
  • Extra virgin olive oil, 2 tbsp ( You may use soybean oil) 
Methods:
Cook noddles untill soft, strain water and keep aside. 
The best way to cook noodles is, In apan take 4 cups of water(for 100 gm noodles), when the water comes to boiling point add few drops of oil and also raw noodles, boil for 20 secs and remove from flame, Strain the water and instantly seperate them with a fork to prevent them sticking to each ther. This is how I get non-sticky noodles that doesn't stick to my pan.



Steam egg, click the link for recipe of steamed egg. In a pan heat oil, slice and add roasted garlic, chopped chives and a pinch of salt for seasoning. Square cut steamed eggs and saute in pan for a minute. Add noodles, salt to taste and blackpepper powder. Toss for 2 minutes. Turn off the flame, combine lime juice with noodles. Serve!!

Tips- Instead of steamed egg, you may add soybeans( if you prefer vegetarian food) or boiled and shredded chicken or scrumbled eggs.

Mixed Veg Soybean Rice

You can say it veg rice, as this one comes with all the goodness of vegetables, herbs. Moreover it was prepared using less amount of oil ( few drops of olive oil and 1 tsp low fat butter, but the quantity may change depending on the rice quantity).
You may use brown rice instead of basmati rice and can add stir fried chicken /egg of your choice.




Ingredients:(4 servings)
  • Rice, 1 cup (100 gm)
  • Carrot,1
  • French beans, 6-8
  • Onion,1
  • Garlic, 3-4 cloves
  • Soybean, 1 small cup
  • Salt to taste
  • Sugar,1 tsp
  • Black pepper powder, 2 tsp
  • Herbs, 2 tsp ( Here dried persley and rosemary have been used)
  • Lemon juice, 1 tbsp
  • Olive oil/ Soybean oil, 1 tbsp
  • Low fat butter,2 tsp
Method:

         Chop onion,garlic and cut vegetables into small cubes. Boil soybeans till turn soft and keep  aside.
In a pan heat oil and butter. Saute vegeables on low flame till become soft, Add a pinch of salt and toss them. It took nearabout 5 minutes.



Add rice, mix salt, sugar, black pepper powder and chopped herbs. Cook for 3-4 minutes. Keep stirring in the middle.

At the end turn the flame off and mix lime juice. Do not heat after that as vitamin c that comes from lemon reduces in excessive heat.

  •  Serve hot.
